We recently stumbled upon a seriously drool-worthy Instagram and we haven’t stopped stalking it since.

While we’re big health and fitness advocates here in STELLAR, there’s nothing wrong with a bit of well-deserved indulgence. In fact, we’re all for it. People, especially young women, put so much time and effort into exercising and dieting, that we often forget to enjoy the luxuries in life. And by luxuries, we mean chocolate, cakes, and delicious sweets and treats.

20-year-old Kim Horkan’s Instagram put a smile on our face and gave us some serious recipe inspiration. What’s more, she makes customised cakes for her customers too, available on BakeMyDay’s website.  The delicate and intricate detailing on her creations will have you in awe. We’ll be letting loose in the weeks to come and spending our Easter eating chocolate, thank you very much.

We caught up with Kim to chat all things baking.

How long have you been baking?

I’ve been baking since I was about eight or nine. I’ve always loved it but I’ve been baking on a commercial basis since June 2015, that’s also when I did my first novelty cake.

What’s your favourite recipe to make?

My favourite recipe would probably be pavlova or anything to do with meringue, I love the consistency and you can make it in various different shapes, colours and styles. Chocolate biscuit cake is probably my most popular cake though, people are mad for it!

How long on average does a cake take to make?

I suppose it depends on the design of the cake and type of cake they have ordered, I have dIfferent ranges of flavours to choose from.  On average I would say two to three hours from start to finish, but I have spent five hours on a cake in the past, it depends on the difficulty of the design.

Is there any cake you would love to master?

Any of Cake Bosses’ cakes really, they are just so incredible! They are so intricate and detailed, I would love to get to that standard.

Where do you get your recipe ideas?

My grandmother opened her own bakery when she was just 18 and has loved baking all her life, I have some recipes from her and some I’ve found online and played around with them a bit to make them my own.

What’s your favourite type of chocolate to use when baking?

My favourite chocolate bar would be Kinder Bueno, I use it a lot in baking. The chocolate I use in my cakes is so nice as well. It’s Belgian chocolate called Callebout and I buy it in bulk so there is always loads of it in my house, which isn’t good for the waist line!

Do you find it hard not to eat your cakes after you bake them?!

Strangely I don’t really like cake, I’m much more of a savoury person. Obviously I taste my new recipes but other than that I don’t really eat it. I guess it’s kind of good I don’t eat cake because I’m surrounded by it everyday and it would just be too tempting. My parents and brother love it though, they are always testing out samples of new recipes.

What cake are you most proud of so far?

Last week I made a giant chocolate biscuit Creme egg cake and I was very happy with the outcome, it went down a treat at the party it was for. I love people’s reactions when I deliver their cake, that’s the best part.

What’s your favourite part of baking?

I love the way every cake design is different, it never gets boring.

What’s your essential equipment?

I have so much equipment. Literally boxes and boxes of different things, I was so surprised at the amount of different equipment you can buy for baking and cake decorating, I’ve made great friends with my suppliers at Strictly Sugarcraft.  I suppose my Kenwood mixer is my most valued piece of equipment.
