If you've exhausted all of your usual options, here are some quick and delish recipes.
We’ve said it before and we’ll say it again, there really is only so much chicken curry, banana bread (dare I say it), and spaghetti bolognese one can make before it starts to all taste like cardboard.
And let’s be real, as dinner is one of the only simple pleasures we have at the moment, it’s good to not dread it if at all possible.
Therefore, if you’re similar to us, and looking for some new (and easy) ideas for cooking up a delish storm at home, here are some of our favourite recipes from incredible Irish chefs to get trying this week!
Ginger Soy Stir Fry
Recipe
- 2 Cloves of Garlic
- 30g of Fresh Ginger
- 15ml of Maple Syrup
- 80ml of Tamari or Soy Sauce
- 45ml of Sesame Oil
- 30ml of Apple Cider Vinegar
- 400g of Firm Tofu
- 350g of Broccoli
- 4 Spring Onions
- 250g of Mushrooms
- 1/2 a Chinese Cabbage

Recipe
- 1Ib lamb mince
- Sea salt/ cracked pepper
- A good handful of fresh breadcrumbs
- 1 tsp of cumin
- Fresh rosemary
For the pesto
- 2 good handfuls of basil
- 200ml of good quality olive oil
- 2 cloves of garlic
- A small handful of blanch almonds
- A handful of freshly grated Parmesan
For the tzatziki
- 5cm piece cucumber , deseeded and coarsely grated
- 200g pot thick Greek yogurt
- 2 tbsp chopped mint, plus a handful of leaves to serve
To serve
- Brioche huns toasted
- Extra grated Parmesan

Spicy Spagetti Shrimp
Recipe
- 400g spaghetti
- 6 tbsp olive oil
- 500g raw king prawns, shelled and deveined
- 6 garlic cloves, finely sliced
- 1 tsp chilli flakes (or more if you can handle it!)
- 3 anchovies
- Finely grated zest and juice of 1 lemon
- Fresh basil, to garnish
- Sea salt and freshly ground black pepper

Roast Butternut Squash, Cashel Blue And Saffron Pappardelle
Recipe
- 600g butternut squash (or 400g peeled and seeds removed)
- 2 tablespoons olive oil
- 200ml crème fraîche
- 100g cashel blue cheese
- ½ teaspoon saffron
- sea salt and freshly ground black pepper
- 250g fresh pappardalle
- 20g pumpkin seeds

Lemon Sole With Beurre Noisette

- 50g (1⁄3 cup) plain (all-purpose) flour
- Salt and black pepper
- 4 lemon sole, about 225g (8oz) each, cleaned, gutted and skinned
- 100g (1 stick) butter
- 2 tbsp sunflower oil
- Zest and juice of 1 lemon
- 2 tbsp capers, rinsed
- 2 tbsp finely chopped flat leaf parsley
