Wondering what you can whip up this evening? In the mood for something that lacks effort yet still tastes delish? If you’re similar to me and over the course of the past few months, have exhausted all your usual options like chicken curry, tomato pasta and lasagne until at least 2022 when you’ll think about them again, well, you’re in luck, because I have some equally easy, equally tasty dinner options to provide you with for the evening.
Coming from some of our favourite chefs in both Ireland and the UK, I present you with these easy, breezy dinner options that take the work (and pressure) out of the night.
Jamie Oliver’s Pork Tacos

Ingredients
Pork
- 350 g skinless higher-welfare pork belly
- 1 heaped teaspoon fennel seeds
- 1 heaped teaspoon sweet smoked paprika
Beans
- olive oil
- 1 good pinch of cumin seeds
- 3 spring onions
- 2 cloves of garlic
- 1 x 400 g tin of black beans
Salad
- 1 fresh red or green chilli
- 2 little gem lettuces
- ½ a bunch of fresh coriander
- 1 ripe avocado
- 1 large ripe tomato
- 1 eating apple
- low-salt soy sauce
- extra virgin olive oil
- 1 lime
To serve
- Lingham’s chilli sauce
- 4 tablespoons fat-free natural yoghurt
- 8 corn taco shells

- 100 g cashew nuts – soaked overnight or soak in boiling water for 10 mins
- 500 ml oat milk
- 1 tsp salt
- ¼ tsp fresh ground black pepper
- 1 tsp garlic powder
- juice of 1/2 a lemon
- 100 g jarred roasted red peppers
- 20 g fresh basil

- 1 cauliflower, trimmed and cut into florets (about 500g)
- 2 onions, peeled and diced
- 2 garlic cloves, peeled and minced
- 1 tbsp of ginger, grated
- 1 tsp garam masala
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 1/2 tsp chilli powder
- 4 tbsp of ground almonds
- 2 tbsp of desiccated coconut
- 300ml of vegetable stock
- 300ml of natural yoghurt
- 1 tbsp of flaked almonds, toasted
- 2 tsp coconut oil
- chopped coriander, or parsley, to garnish
- salt
- pepper
