5 Healthy Sweet Potato Recipes You Won’t Believe Are Good For You
It's a fave among foodies everywhere, and we've found five yummy recipes that use sweet potato to its full potential.
Sweet potatoes are right at the top of our favourite foods list. Why? They’re full of vitamins A and C, minerals iron and calcium, and they taste damn good too. A healthier alternative to the regular roosters, we found five delicious ways to put them to use.
1. Wedges
Craving a chipper? Whip up some sweet potato wedges to fight those cravings in a healthier way. All you gotta do is cut a sweet potato into wedges, coat them with your fave seasoning, add lemon juice and oil, and bake for 30 minutes. Spices we recommend are chilli, paprika, cumin, or rosemary. A pro tip? Heat your baking tray first. It’ll give the chips that extra crispiness.
2. Curried carrot, sweet potato and ginger soup
Who doesn’t love a bowl of hearty soup on a cold day? Well this curried carrot, sweet potato, and ginger soup is a serious winter warmer with a bit of spice to it, as we enter the colder months. All you need is some oil, chopped shallots, peeled sweet potato, chopped carrots, grated ginger, curry powder, chicken stock, and salt, to rustle up the ultimate comfort food.
3. Sweet potato pancakes
Feel like something sweet for breakfast, with none of the guilt? Then these sweet potato pancakes are the perfect choice. Serve with a sprinkle of cinnamon on top and some maple syrup for extra sweetness.
4. Sweet Potato, Chickpea, and spinach curry
This Jamie Oliver recipe is a delicious veggie dinner option, but you can add chicken or fish if you want to add a bit more bulk to it. You can also try out different veg such as red peppers, cauliflower, or aubergine.
5. Chocolate Chip Muffins
These yummy muffins are a lovely quick treat, that aren’t super healthy but not the worst either. We say rustle up a batch at the start of the week to tackle those sweet and savoury cravings, that always seem to strike mid-afternoon.
