Dinner Time: Here’s How To Make Tasty Cauliflower Wings With Blue Cheese Dip

If you’re fresh out of ideas for dinner tonight, join the club. Over the past couple of weeks I’ve exhausted my tastebuds when it comes to curries, pastas, soups and toasties. I’ve learnt the hard way that there’s really only a certain amount of one dish you can eat before you don’t want to see the sight of it for another month or so.
Therefore, I’ve been changing things up in the kitchen more regularly, and one recipe I’m seriously loving which can be used as a festive date night starter, a weekend fakeaway or simply, a delish hump day meal is homemade cauliflower wings with blue cheese dip.
An easy one to whip up in the kitchen that’s vegetarian friendly; here’s what you need.
Ingredients – wings
1 head of cauliflower
Franks hot sauce
70g flour
50g breadcrumbs
2 teaspoons of garlic powder
4 teaspoons of paprika
1 teaspoon salt
1 teaspoon pepper
180ml milk
Ingredients – blue cheese dip
300g crème fraîche
100g mayonnaise
150g Roquefort blue cheese
1 tablespoon white wine vinegar
1 tablespoon Worcestershire sauce
Method
Break your cauliflower into florets and place them into a bowl, put the bowl to one side.
In a separate large bowl, mix your flour, breadcrumbs, milk, paprika, garlic, salt and pepper together. Add a dash of water if the mixture is a little too thick but not too much, as you don’t want the mixture to slip off your cauliflower.
Dip each floret into the mixture and place them one by one on a baking tray lined with greaseproof paper.
Bake for 20 minutes, making sure to flip 10 minutes in.
Remove your wings from the oven and in a separate bowl, fill it with enough Franks hot sauce to coat each wing.
After coating each wing, place them back on the oven tray and pop them into the oven for another 20 minutes, again, flipping halfway through.
After flipping your wings for the final 10 minutes, now it’s time to make your blue cheese dip. In a medium-sized bowl, mix the cream, mayonnaise, blue cheese, white wine vinegar and Worcestershire sauce together. Finish with a little pepper and pop into a serving bowl.
Now, take your wings out of the oven, serve on a cute dish alongside the dip, a few celery sticks if you wish and a bottle of beer and voila, you’re done!
