Poached egg avocado toast
This recipe is so easy, incredibly filling and you won’t spend longer than 10 minutes making it. All you need is two slices of wholewheat bread, two eggs, an avocado and some tomatoes too if you feel like it. Perfect for breakfast, lunch or a quick evening snack.
Cheesy Bruschetta Bites
Blogger Alice from Sauce Pots was our inspiration for this recipe. It’s quick, requires little time or effort and is also healthy as can be. It’s a perfect dish to whip up for brunch, lunch or a light dinner.
Chickpea Korma
We found this recipe on the Healthy Essence Blog and it’s such an easy dinner idea. The creamy curry is loaded with flavour and it’s also vegan, dairy and gluten-free. Make a big batch for a Saturday night in and save the leftovers for your lunch on Sunday and Monday.
3 Ingredient Paleo Breakfast
Nicola Halloran from The Wonky Spatula has dozens of mouthwatering recipes that are nearly always gluten-free, dairy-free and 100% paleo. This bacon and sprout recipe is a nice alternative to your egg breakfast or brunch and literally takes six minutes.
Egg Fried Cauli-Rice
We got this meal idea from our favourite Food Medic Hazel Wallace. Essentially all you need is some cauliflower and chopped spring onions and an optional egg white and red pepper. In ten minutes you’ll have yourself a deliciously healthy meal.
Dark Chocolate Chilli Con Carne
Gluten Free Fi Fiona Mccartan has some amazingly imaginative gluten-free recipes including this saucy number. The mince is optional so if you fancy going veggie, just fill it up with the black beans. A perfect, hearty and healthy meal for a weekend night in.
Garlic, Chilli And Lemon Prawn Pasta
Sticking to Fiona’s blog, we tried out her gluten-free pasta recipe and it’s simply gorgeous. It’s a lovely dish to make for friends and absolutely full of taste. The lemon and white wine make it an almost ramen-style dish and the chilli and garlic give it a serious kick.
Apple, Beetroot And Broccoli Salad
Annie Kirwin from Platnium Pilates gave us this lovely light salad idea and it doesn’t require any cooking at all. You have the option to add some chicken or meat if you want to bulk it up but it’s absolutely gorgeous just the way it is. Best part is, it’s so full of taste you won’t even need a dressing.
Tuna Rainbow Salad
This high fibre colourful salad from Food Flicker is full of protein, vitamins and minerals and it’s also gluten and dairy-free. It’s a perfect option for when you’re on the go and it also acts as an excellent recovery meal if you’re just finished in the gym.
Omelette In A Mug
This idea is for when you’re feeling super lazy or hungover and you can’t focus on anything. Chop some onions and shred some cheddar and mix it with two eggs. Flavour with pepper or chilli flakes and pop the whole mixture into a mug or small ceramic dish. Pop it into the microwave, zap for two minutes and garnish with chives and Crème fraîche. Voila.
