Jen Carroll Talks Leaning On Your Friends Through Tough Times, & How Her Book Is So Much More Than Recipes

"I was so open and honest, more so than I ever had been before"

Jen Carroll (@jens_journey_ie) has certainly been on a journey. The author and influencer has had a tough few years but come out on the other side – with an inspiring book under her belt, friends she can rely on, and some big dreams for the future!

For our latest issue of STELLAR magazine, Megan Roantree chats to our cover star about her book. Jen’s Journey deals with her weight loss journey, but it’s not limited to her physical transformation; it’s much more than that.

“I feel like the story and recipe combination is perfect because that’s my [Instagram] page.”

Jen tells Megan about being nervous to include her experience of an abusive relationship, but how she knew it was “an important part of my journey”.

“I remember when I opened up about it [online], the amount of responses I got…

“It’s a massive responsibility and it did scare me but I remember just thinking it’s more important to talk about it than it is to be worrying about it.”

Jen is joined on the cover of the July/August issue of STELLAR by good friends Grace Mongey and Dominique Nugent.

Speaking on the importance of friendship, she tells Megan how she wouldn’t be where she is today without her “people”.

“I always say I was very privileged and lucky that I had friends. Opening up to them, they were like my soulmates. They literally helped me build myself back up. Grace was just incredible, she never left my side.”
