It’s officially freezing.

The wind is bitter, the rain is cold, and the electric blanket is pretty much always on.

January can be a tough time to get your veggies in. It’s a grim time of year, and honestly, the last thing in our minds is making sure the five a day is being hit.

So, what better time to get super into soup?

Nutritious, delicious, and most importantly, warm, soup is the king of January meals – and we’ve got a whole host of easy recipes for you to try this month.

The roasted garlic soup has got to be a personal fav.

Chicken and leek pasta soup

@lucysallysommer Apologies in advance, this is going to be your next soup fixation 🧀🐚🍋✨ Creamy Chicken, Leek Pasta Soup Ingredients | Serves 4-5 Large knob of butter 1 brown onion, diced salt 3 leeks, halved and sliced 3 cloves garlic, minced 2 sprigs rosemary, needles finely chopped 1.3L chicken stock (I used 2x kallo stock cubes) 1 lemon (zest and juice) 2 chicken breasts 250g dried short pasta 150 ml double cream ½ cup parmesan Black pepper and salt Method: 1. Place a dutch oven or large saucepan on a medium low heat. Add the butter followed by the onion, leeks and a generous sprinkle of salt. Return the lid and cook gently for about 10 minutes until really soft and slightly golden and creamy. 2. Stir in the rosemary and the garlic and let this cook for a couple of minutes. 3. Pour in the chicken stock followed by the grated zest of 1 lemon. 4. Add in the chicken breasts making sure they are submerged in the stock. Return the lid and set your timer for 5 minutes (watch the heat, the stock should be simmering gently). 5. After 5 minutes add in the pasta shells, return the lid and set the timer for 4 minutes. 6. After 4 minutes remove the chicken breasts into a bowl to cool slightly before shredding with two forks. Add the lemon juice to the soup and when the pasta is al dente remove the soup from the heat. 7. Return the chicken to the soup followed by the parmesan, double cream and a generous crack of black pepper. Roasted garlic soup

@alfiecooks_ ROASTED GARLIC SOUP 🧄 SOUP SEASON 2 welcome back to SOUP SEASON 2 – the series where I show you how to make the best soups in town. for EPISODE 7, I’ve made my ROASTED GARLIC SOUP. made with minimal ingredients. topped with chives + crispy chilli oil, this soup is as glorious + garlicky as can be. perfect for anyone celebrating thanksgiving this week too 🥳 I’ve written my full recipe for you below – so enjoy! and as always, let me know if f you give it a go! Alfie x INGREDIENTS (serves 4) 2 garlic bulbs 1 large brown onion 1 large potato 15g fresh thyme 750ml vegetable stock (more if required) 250ml cream (I used @floraplant double) Bunch fresh chives Crispy chilli oil (I used @Dudu eats) 1 tbsp butter (I used @floraplant salted) Salt Pepper Olive oil 1. Slice the tops off the garlic bulbs. Season with salt, pepper + olive oil. Cover in foil + roast in the oven at 180 Celsius for 30-40 mins until golden + soft. 2. Dice the onion + potato. Pick down the thyme leaves too. 3. In a saucepan, add a splash of oil + melt the butter on a medium high heat. 4. Add the onion + potato with a pinch of salt. Cook until softened for 10 mins. 5. Add the thyme + squeeze the roasted garlic cloves in too. 6. Cover with vegetable stock and + leave to simmer for 10 mins. 7. Transfer to a blender + blitz until smooth, adding your cream gradually. 8. To serve, finely chop chives. Ladle the soup into bowls. Finish with a swirl of cream, chilli oil if using + chives. And remember, if you like what you see, make sure to follow for more soup season with me 🤩 INGREDIENTS (serves 4) 900g frozen peas 1 potato 1 onion 4 garlic cloves 1 litre vegetable stock 1tbsp miso paste (optional) Large bunch of mint 1 lemon 2tbsp olive oil 2tbsp (vegan) butter Salt Pepper Sugar TO SERVE Crispy onions / shallots (Vegan) cream Smoked paprika Toasted sourdough METHOD 1. Add the oil + butter to a large saucepan over a medium heat. 2. Finely dice the onion, then add to the saucepan once the butter has melted with a large pinch of salt. 3. Peel the potato, chop into small cubes, then add to onions + cook until soft (10-15 minutes) 4. Mince the garlic, add to the pot + fry until fragrant (1 minute). 5. Add 750g peas, the vegetable stock + miso paste. 6. Simmer for 5/10 minutes, or until potatoes are cooked through. Add a large handful of mint leaves & cover with a lid. 7. Reserve the rest of the peas for garnish – place in a bowl of boiling water for 3 minutes, then into cold water + set aside. 8. Blend the soup until smooth, then place back in the pot + bring to a simmer. Season to taste with a squeeze of lemon juice, then salt, pepper + sugar if needed. 9. To serve, ladle into bowls, top with a swirl of cream, olive oil, a spoonful of peas, crispy shallots + a sprinkle of smoked paprika. 10. French onion soup

@foodmymuse French Onion Soup ❤️ back at the restaurant this was one of the most ordered items, I’ve tweaked it over the years and here it is! This soup yields 4 servings. ProTip: this soup is always better the next day! The balsamic adds a nice pop of acid and the maggi enhances the richness. Ingredients: •5 large onions (I used Vidalia). •1 large garlic clove. •2 tbsp butter. •1/4 tsp allspice. •1/4 tsp cayenne pepper. •1 tsp seasoned salt to taste. •3 sprigs fresh thyme (plus more for topping). •1 bay leaf. •2 tsp maggi jugo. •2 tsp balsamic vinegar. •2 cups good white wine. •8 cups good beef stock. •Sliced ciabatta. •gruyere to taste. •emmentaler to taste. •parmigiano to taste. •crushed red peppers. Directions: 1. Slice your onions thinly. 2. Add drizzle of olive oil to a preheated heavy bottomed pot. Add onions, don’t worry if they look like too much. Let them cook on medium high for 5-7 min or until they start softening. Don’t fret if they release their juices, they will reabsorb. 3. Once softened add your butter and let them caramelize for 45-50 min on medium heat, stirring often. 4. Add in maggi, balsamic, salt, pepper garlic, allspice, cayenne and thyme. Let them keep caramelizing for 15 more minutes. 5. Deglaze them with the wine, let it reduce by half. 6. Add in the 8 cups of stock and bayleaf. Simmer for 30 min.  7. Serve it, top with the toasted bread, plenty of cheese and broil for a couple minutes until melty and golden. Chicken noodle soup

@chefdwightsmith Chicken Noodle Soup Recipe ⬇️⬇️⬇️ Delicious comforting and easy to make. This take on a classic chicken noodle soup will definitely hit the spot!! Save the reel and try this for yourself. ✌🏾 Recipe, 3 tablespoons Butter 1 large Carrot – diced 1 large Onion – diced 2-3 stalks Celery – diced 6 cloves Garlic – chopped 4 Chicken breasts – skinless 2 tablespoons Dry Jerk spice or Cajun 3 litres Chicken stock or broth 2 sprigs Thyme 2 Bay leaf 1 tablespoon chopped Parsley Scotch bonnet Salt and pepper to taste 2 tablespoons Parsley – chopped 2 tablespoons Parmesan – grated Method, Season your chicken breast on both sides. In a large stainless steel pan sear off your chicken 2 minutes per side and add them to a large pot. Fill pot with chicken stock and place on medium heat. Once liquid begins to boil turn heat off and allow to cool. Put a large thick bottomed pot on medium heat and add your butter. Next sweat off all your vegetables in the butter for 3-4 minutes. Then add your garlic and continue to sweat for another 2-3 minutes. Add thyme, bay leaves, and scotch bonnet pepper. Remove chicken breasts from stock and set aside. Pour in your stock to the vegetables and bring this to a simmer. In a separate pot cook your pasta noodles. Once chicken has cooled slightly but still warm shred by hand into a large bowl. Add chicken and pasta into your pot and stir to incorporate. Taste for seasoning and adjust accordingly.
