Looking for some dinner inspo?
At the start of lockdown we all took our time trying to master the art of banana bread. However, two months in and we’re left scrambling for ideas on how to keep things in the kitchen exciting. Stripped of the usual pleasure of being able to go out for a meal to break up the week, it is no wonder a lot of people are losing their motivation. Finding something simple, different but also tasty can be hard at the best of times – so we’ve put together a list of 10 easy dinner recipes for you to try this week, all created by our fave Irish chefs.
1. Honey Mustard Chicken – Donal Skehan

Ingredients
× 1 tbsp olive oil
× 4 boneless, skinless chicken thighs
× 4 slices bacon, thinly sliced
× 3 garlic cloves
× 60ml white wine
× 3 garlic cloves
× 2 tbsp butter
× 1 tsp dijon mustard
× 1 tsp honey
× 1 tbsp capers × 3 dashes hot sauce, or to taste (try @calicalifoods)
× Handful of fresh parsley, chopped

2. Fusili with Sausage and Cabbage – Currabinny (James Kavanagh and William Murray)

Ingredients
× 300g fusili pasta
× ½ green cabbage (shredded)
× 4 good pork sausages,
× Sea salt & black pepper
× 50g of butter
× A little cream or creme fraiche
× 60g of good mature cheddar or farmhouse cheese (grated)

3. Lemony Salmon with Cherry Tomato Couscous – Nigella Lawson
Ingredients
× 200 grams couscous
× 3 teaspoons sea salt flakes or 1½ teaspoons pouring salt
× ½ teaspoon paprika
× 1 x 15ml tablespoon grated fresh root ginger
× 250 millilitres freshly boiled water
× ½ small red onion (finely chopped)
× zest and juice of 1 lemon
× 1 x 15ml tablespoon garlic infused olive oil plus 1 teaspoon more
× 300 grams cherry tomatoes
× 4 salmon fillets
× 4 x 15ml tablespoons chopped fresh coriander

4. Easy 10 Minute Indian Lentil Dahl – The Happy Pear
Ingredients
× 3 cloves of garlic
× a thumb-size piece of ginger
× ½ a bunch of scallions (approx. 4)
× 1 x 400g tin of chickpeas
× 1 x 400g tin of cooked lentils (we usually use green ones)
× 3 wholemeal pitta breads
× 1 tablespoon oil
× 1 handful of baby spinach
× 1 x 400g tin of coconut milk
× Juice of ½ a lime
× 10-15 cherry tomatoes
× 2 tablespoons curry powder
× 2 teaspoon ground cumin
× 1 teaspoon salt
× 1 tablespoon tamari/ soy sauce
× ½ a teaspoon black pepper

5. Cheesy Kale Bake – Rachel Allen

× 400g curly kale, stalks removed, thickly shredded (weigh after stalks are removed)
× 25g butter
× 25g plain flour
× 400ml milk
× 250g cheddar ,gruyere or mixed leftover cheese, grated
× 1 tsp Dijon mustard

6. Beef and vegetable kebab – Kevin Dundon

× 400g of Sirloin Beef (cut into bit size pieces)
× 2 peppers (cut into bit size pieces)
× 1 courgette (diced)
× 4-5 button mushrooms
× 1-2 onions
× 100g of cherry tomatoes

× 900g jersey royal potatoes
× 3 tablespoons fresh mint, chopped
× 2 spring onions, finely sliced
× 10 radishes, finely sliced
× 200g / 1 cup creme fraiche
× 1 tbsp preserved lemons, chopped (or lemon zest)
× 1 lemon, juice
× Sea salt and freshly ground black pepper

Ingredients
× 2 chicken fillets (sliced into small strips)
× 200g of ground almonds
× 1/2 tsp of cumin
× 2 eggs beaten
× 1tsp of coconut oil
For the chips
× 4 medium sized maris pipers washed
× 1 onion sliced
× 1tbsp of coconut oil
× 2 sprigs of rosemary
For the spice
× 2 good pinches of sea salt
× 1tbsp of chinese 5 spice
× 1/2tsp of garlic powder

× 2 x 400g Tin of Chopped Tomatoes

10. Chicken Tortillas with Avocado, Chilli & Sour Cream – Conrad Gallagher
Ingredients
× 400 grams Boneless, skinless chicken, diced
× 2 tbsp Olive oil
× 4 Soft flour tortillas, each about 20 cm in diameter
× 2 Heaped tbsp Soured cream
× 2 Ripe avocados
× 1 Ripe tomato, peeled, seeded and diced
× 1 Red chilli, seeded and finely chopped
