If you’re looking for a breakfast that will increase your fibre intake, leave you feeling full across the day and give you a sustained amount of energy, then look no further than a bowl of granola.
Granola is also a great breakfast idea if you’re on the go and need to meal prep for the week – because the last thing you want to do is skip breakfast!
There are so many delicious brands on the shop shelves these days, but nothing will ever taste as nice as a homemade version.
Here’s an easy and delicious granola recipe you can make ahead of the week, to give you that kickstart morning.

What you will need
- 2 cups of oats
- 1/4 cup of coconut oil (olive oil or a nut butter can be used as alternatives)
- 1/3 cup of honey
- 2 tsp of cinnamon
- Pinch of salt
- 1 cup of chopped nuts/ seeds/ coconut flakes (optional)
Method
- Pre-heat your oven to 180 degrees (160 degrees on a fan oven).
- In a bowl, add in all your ingredients and mix together until well combined.
- Lay out a tray with parchment paper and pour the mixture onto the tray.
- Spread the granola thinly across the tray.
- Bake for 12 to 15 minutes then give the granola a mix.
- Bake for a further 12 to 15 minutes until golden and crunchy.
- Leave to cool before serving.
- Enjoy your quick and crunchy homemade breakfast for the week!
