My career highlight would be winning Miss World in 2003. It kicked off my career and changed my life, but having my first book published in 2015 and finding out that it had become a number one bestseller was a proud moment too.

My coffee order is an oat flat white… or a large americano if I’m tired.

My favourite season is Spring as my birthday is in April, and I love the flowers, longer days and fresh feeling of renewal that time brings.

My dream party dinner guests are my parents and my husband, Wes. We haven’t been out to dinner together for a year due to the pandemic, and we have the best fun at the dinner table. Can I invite my granny too? She’s 94 and has lived the most interesting life!

If I wasn’t in my current career, I probably would’ve gone down an academic route, or into a science-based career. I’m secretly a science geek and did a Masters in personalised nutrition in 2018-19.

My favourite number is 11, because my three babies were all born in November. It definitely feels like a lucky number.

Just one of my childhood nicknames is Rosie, which everyone still calls me! Others were Rosenshine, Ronda, Poser and Dozy Rosie because I tend to fall asleep watching movies!

My signature scent is Chanel’s Coco Mademoiselle.

Growing up, we had a gorgeous black family labrador called Milly. She passed away in 2011 at the age of 15 and I cried for two weeks.

Our honeymoon to The Seychelles was the best holiday I ever had. We spent two incredible weeks swimming and snorkelling in the Indian Ocean and overindulging in cocktails, desserts and huge meals.

My hopes for 2021 are to be able to visit my granny in Wexford again and meet up with friends and family. I miss my brothers in London so much. It’s difficult to plan for anything anymore, so just surviving each day without too much baby sick down our fronts is the main goal.

I’m an ambassador for Cystic Fibrosis Ireland’s 65 Roses Day. Unfortunately, Cystic Fibrosis Ireland couldn’t proceed with their collections this year due to COVID-19. I’d really urge people to please consider supporting them by donating online at 65rosesday.ie.

I binged The Crown just before the twins were born in November but haven’t watched much since. Any bit of spare time we get now is spent having a nap!

My style icons are Blake Lively, to see what she’s wearing for red carpets, and Rosie Huntington-Whiteley for ger chic hair and makeup. I also love Holly Willoughby’s looks on This Morning.

My death row meal would be a big vegan Indian meal from Rasam Restaurant. Poppadoms and dips, curries, sides, lots of rice and naan all washed down with chilled Veuve Clicquot, and something chocolatey and creamy for dessert.

My first part-time job was teaching art classes to children at a summer camp held in my old primary school when I was 18.

I always have lipstick in my handbag! Usually Charlotte Tilbury Bitch Perfect.

My favourite music artists are Hozier and Dermot Kennedy, and I’m a bit of an 80s power ballad fan. I’ve also recently rediscovered 90s RnB.
