6 Healthy & Delicious Beetroot Recipes We Can’t Stop Salivating Over

Low-calorie, nutrient dense, and loaded with a whole host of body-loving properties, the beetroot is a super saintly veggie. We've found six scrummy ways to get more of it into our diets.

Beetroot: We still associate it with Sunday teatimes as a child when we’d ‘catch’ it with a fork out of vinegar in a jar, splashing the table and ourselves with a bright purple stain. #NotAGoodLook.

Now though, we know that beetroot has some major health benefits; It fights inflammation for one, can reduce your risk of cancer, and is loaded with detoxifying and immune-boosting properties to boot. So, given that it’s good for us, we wanna scoff more of this brightly coloured veggie. Here are six delicious and healthy ways to do just that…

1. Beetroot and ginger chocolate brownies

These purple-hued brownies have an earthy taste and are a little fiery, giving you one of your five a day in a very wicked way. There is debate about whether a brownie should be cakey or fudgy: these ones are definitely on the gooey side.

2. Beetroot tzatziki

This simple Beetroot Tzatziki is a tasty – and bright! – variation on a classic condiment. It’ll keep in an airtight container in the fridge for at least three days, and the colour may get more intense. This one will be a hit at the next girls night in – pink yoghurt made with veggies? Sold!

3. Pink pancakes

Let’s be honest it’s fun to have a reason to make our food colourful! Naturally, beets have one of the deepest and brightest colors and can turn any food a girly hue. Our fave, though? We’re mad for pink pancakes.  This homemade pancake recipe is definitely one you’ll want for Valentines.

4. Beetroot risotto

Not for the faint hearted, with its shocking colour and sound flavour, this dish is quite the exhibitionist. Keep it simple if that’s how you like it, but the optional toppings add layers of flavour. Serve as a main course, a starter, or as a lovely little extra alongside a bit of beef or oily fish, such as salmon or mackerel. We love this simple recipe with goat’s cheese and pine-nuts.

5. Beetroot, pink lady apple and grapefruit juice

6. Soup extraordinaire

It will warm the cockles of your heart and your tummy will thank you too. This gorgeous, healthy and very tasty beetroot soup is oh-so-simple to make. Beetroot, sautéed onions and garlic simmer in beef broth before being finished with a swirl of cream. You’ll wish you had this recipe donkeys ago-and trust us it’ll be one of your autumn kitchen staples for years to come.
